Whipped Feta and Pumpkin Crostinis

If you're looking for a cheap and ease appetizer that looks elegant and is packed with flavor, look no further. This has everything you need for either a night in handing out candy to little monsters, or a party with all your best Ghosts and Ghouls.

 


Whipped Feta and Pumpkin Dip on a Toasted Crostini


Ingredients:

  • 8 oz block of feta cheese

  • 1/4 cup plain greek yogurt 

  • 1 cup 100% Pumpkin Puree

  • 1-2 Tbsp honey (plus more, to serve)

  •  2 tsp fresh thyme (or 1 tsp dried thyme)

  • Black pepper

  • Chopped walnuts (toasting is optional)

  • French Baguette (cut at an angle)

  • Olive Oil


Instructions:

1.) Preheat your oven to 350 degrees Fahrenheit.


2.) Place Feta, Greek yogurt, Pumpkin puree, honey, thyme, and black pepper into a food processor and blend until smooth. Transfer to a bowl and refrigerate for 30-60 minutes.


3.) Cut the French Baguette on the diagonal to have thin wide slices. Cover both sides with olive oil and salt, and place in the oven for 10-14 minutes, turning after 7 minutes to ensure toasting and not burning.


4.) Once the Crostini are done toasting, and the dip is chilled, assemble by placing a generous amount of the dip onto the Crostini and then topping with the chopped walnuts, fresh thyme, and a drizzle of the honey. Serve and Enjoy.
