I LOVE the tropics. I’ve never been to Hawaii but if it’s anything like Puerto Rico it’s got to be gorgeous. Lately, I’ve been feeling the pull of the beach. The closest beach we have here is Revere and it’s okay, but not like the Florida beaches I grew up with. So I’m trying to celebrate the beginning of summer the best way I can and that’s through food. That’s when I had this delicious idea to make this Hawaiian Fried Rice and now the recipe is ALL YOURS!
If you’ve been following my blog for a while you’ve probably seen my post for BETTER THAN TAKE OUT FRIED RICE and this recipe uses that as a base. However, I’m going to elevate it to a world of palm trees and blue oceans by adding some Spam which is a Hawaiian meat staple, shrimp, and pineapple chunks! This recipe is great if you have some leftover rice that is a little on the hard side. I can’t wait to share this with you so let’s get started!

2 eggs, whisked
2 medium carrots, peeled and diced on the thin side
1 small white onion, diced
1/2 cup frozen peas
3 cloves garlic, minced
4 cups cooked and chilled rice (I prefer short-grain white rice)
3 green onions, thinly sliced
3-4 tablespoons soy sauce, or more to taste
2 teaspoons oyster sauce (optional)
1/2 teaspoons toasted sesame oil
1 cup Shrimp cleaned and deveined
1 can Spam cut into bite-sized cubes
1 can Pineapple chunks drained

1.) In the morning, make your rice. After it’s done cooking, put it in a bowl and put it in the fridge to cool.
2.) Prep and measure all the ingredients before cooking because this recipe moves fast!
3.) Get the Spam out of the can and chop it into piece and cook over medium heat until it has some color. Then cook the shrimp until they turn pink (about 2 minutes)
4.) Heat 1/2 tablespoon of butter in a large pan over medium-high heat until melted. Add egg, and cook until scrambled, stirring occasionally. Remove egg, and transfer to a separate plate.
5.) Add sliced carrots and cook until soft.
6.) Add an additional 1 tablespoon butter to the pan and heat until melted. Add onion, peas and garlic, and season with a generous pinch of salt and pepper. Sauté for about 5 minutes or until the onions are soft.
7.) Add in the cooked carrots.
8.) Increase heat to high, add in the remaining 1 1/2 tablespoons of butter and stir until melted. Immediately add the rice, green onions, soy sauce, and oyster sauce (if using). The oyster sauce is what really gives it that fried rice flavor. Stir until combined. Continue stirring for an additional 3 minutes to fry the rice.
9.) Add in the cooked Spam, Egg, and shrimp and stir to combine.
***I didn’t add any salt to this because the Spam and the Soy sauce are quite salty by themselves, but if you wish to season it further this is the time to do that.***
10.) Remove from heat, and stir in the sesame oil until combined. Serve immediately, or refrigerate in a sealed container for up to 3 days.
